Main Ingredients:
1 bag coleslaw mix
1 lb corned beef, cut into strips (or roast beef/turkey)
2–3 tbsp butter
1 cup Swiss cheese, shredded
2–3 scallions, sliced for garnish
Russian Dressing:
1 cup mayonnaise
1/4 cup sugar-free ketchup
4 tsp prepared horseradish
1 tsp hot sauce
1 tsp Worcestershire sauce
1/2 tsp salt
Pinch of black pepper
Instructions
- Heat the butter in a large skillet over medium heat.
- Add the corned beef, cover, and sauté for 5 minutes until heated through.
- Add coleslaw mix to the skillet, cover, and cook another 5 minutes until slightly tender.
- Mix together corned beef and cabbage, then top with Swiss cheese. Cover or broil until cheese melts and becomes bubbly.
- Drizzle with Russian dressing and sprinkle with scallions before serving.
- Serve immediately and enjoy!
