Ingredients

Main Ingredients:

1 bag coleslaw mix

1 lb corned beef, cut into strips (or roast beef/turkey)

23 tbsp butter

1 cup Swiss cheese, shredded

23 scallions, sliced for garnish

Russian Dressing:

1 cup mayonnaise

1/4 cup sugar-free ketchup

4 tsp prepared horseradish

1 tsp hot sauce

1 tsp Worcestershire sauce

1/2 tsp salt

Pinch of black pepper


Instructions

  1. Heat the butter in a large skillet over medium heat.
  2. Add the corned beef, cover, and sauté for 5 minutes until heated through.
  3. Add coleslaw mix to the skillet, cover, and cook another 5 minutes until slightly tender.
  4. Mix together corned beef and cabbage, then top with Swiss cheese. Cover or broil until cheese melts and becomes bubbly.
  5. Drizzle with Russian dressing and sprinkle with scallions before serving.
  6. Serve immediately and enjoy!
