Healthy Peach Cobbler (From-Scratch & Better-for-You Dessert)

Ingredients

2 cups peaches (sliced or diced – fresh, frozen, or canned)

1 dash cinnamon

1 dash nutmeg

1 ¼ cups granulated sugar (or coconut sugar)

1 teaspoon baking powder

¾ teaspoon salt

½ cup milk (or coconut milk for dairy-free)

3 tablespoons butter, melted (or coconut oil)

1 teaspoon vanilla extract

1 cup flour (all-purpose or soft white whole wheat)

1 tablespoon cornstarch

¾ cup boiling water


Instructions

  1. Preheat Oven
    Set your oven to 350°F (175°C).
  2. Prepare the Fruit Base
    Add the peaches to a baking dish or cast iron skillet. Sprinkle with cinnamon and nutmeg.
  3. Make the Batter
    In a mixing bowl, combine:

    • ¾ cup sugar
    • baking powder
    • salt
    • milk
    • melted butter
    • vanilla extract
    • flour

    Stir until just combined, then spread evenly over the peaches.

  4. Add the Sugar Layer
    In a small bowl, mix the remaining ½ cup sugar with cornstarch. Sprinkle evenly over the batter.
  5. Pour Hot Water
    Carefully pour boiling water over the entire dish. Do not stir.
  6. Bake
    Bake for 45 minutes, or until the top is golden and a toothpick inserted in the topping comes out clean.
  7. Serve
    Let cool slightly and serve warm. Optional: top with ice cream or yogurt.
