Ingredients
2 cups peaches (sliced or diced – fresh, frozen, or canned)
1 dash cinnamon
1 dash nutmeg
1 ¼ cups granulated sugar (or coconut sugar)
1 teaspoon baking powder
¾ teaspoon salt
½ cup milk (or coconut milk for dairy-free)
3 tablespoons butter, melted (or coconut oil)
1 teaspoon vanilla extract
1 cup flour (all-purpose or soft white whole wheat)
1 tablespoon cornstarch
¾ cup boiling water
Instructions
- Preheat Oven
Set your oven to 350°F (175°C). - Prepare the Fruit Base
Add the peaches to a baking dish or cast iron skillet. Sprinkle with cinnamon and nutmeg. -
Make the Batter
In a mixing bowl, combine:- ¾ cup sugar
- baking powder
- salt
- milk
- melted butter
- vanilla extract
- flour
Stir until just combined, then spread evenly over the peaches.
- Add the Sugar Layer
In a small bowl, mix the remaining ½ cup sugar with cornstarch. Sprinkle evenly over the batter. - Pour Hot Water
Carefully pour boiling water over the entire dish. Do not stir. - Bake
Bake for 45 minutes, or until the top is golden and a toothpick inserted in the topping comes out clean. - Serve
Let cool slightly and serve warm. Optional: top with ice cream or yogurt.
