Ingredients

⅔ cup uncooked rice (yields about 2 cups cooked)

1 tablespoon olive oil

½ pound ground turkey

3 cloves garlic, minced

1½ tablespoons low-sodium soy sauce

1 tablespoon ginger paste (or fresh minced ginger)

1 tablespoon chili paste

1 teaspoon sesame oil

1 teaspoon fish sauce

Optional Garnishes:

Sesame seeds

Chopped peanuts

Chili oil

Hot sauce

Sliced green onion

Sliced chili pepper


Instructions

  1. Cook the rice according to package instructions.
  2. While the rice cooks, heat olive oil in a 10–12 inch skillet over medium heat. Add ground turkey and cook, breaking it into small pieces, until fully cooked (about 8–10 minutes).
  3. Add garlic, soy sauce, ginger, chili paste, sesame oil, and fish sauce. Cook 1–2 minutes until fragrant and fully combined.
  4. Divide rice between two bowls. Top with the seasoned turkey.
  5. Garnish as desired and serve immediately. Optional: top with a fried egg or cooked vegetables for a more substantial meal.
