Ingredients

For the Peach Filling:

3 cups sliced or diced fresh peaches (about 4 large peaches)

1/4 cup granulated sugar

1 tablespoon cornstarch

For the Cobbler Topping:

1/2 cup vegan butter, melted

3/4 cup granulated sugar

1 teaspoon pure vanilla extract

1 tablespoon soy milk (or any plant-based milk)

1 cup all-purpose flour

1 teaspoon baking powder

1/8 teaspoon salt


Instructions

1. Preheat and Prepare

Preheat your oven to 350°F (175°C). Lightly grease a 2-quart baking dish (an 8×8-inch dish works well too).

2. Prepare the Peach Filling

Place the sliced or diced peaches directly into the baking dish.

Sprinkle the sugar and cornstarch over the peaches, then gently mix everything together right in the dish. Spread the mixture evenly so it bakes uniformly.

3. Make the Batter

In a large mixing bowl, combine the melted vegan butter, sugar, vanilla extract, and soy milk. Stir until smooth.

Add the flour, baking powder, and salt. Mix until a thick batter forms. The texture should resemble soft cookie dough rather than a liquid batter.

4. Assemble the Cobbler

Drop spoonfuls of the batter over the peaches. Gently spread it out, but don’t worry about covering everything perfectly. A rustic, uneven topping gives the cobbler its classic look.

5. Bake

Bake for 30–35 minutes, or until:

  • The topping is lightly golden
  • The peach filling is bubbling around the edges

Remove from the oven and let it cool slightly before serving.
