Ingredients
14 oz. chickpeas, drained and rinsed
¼ cup fresh parsley, chopped
1 tsp garlic powder (or 2 small cloves fresh garlic, minced)
1 red bell pepper, chopped (or yellow/orange)
½ small red onion, quartered
Salt and black pepper, to taste
⅔ cup chickpea flour (or all-purpose flour)
Juice of ½ lime (or lemon)
Neutral oil, for frying (canola, avocado, sunflower, or vegetable)
Vegan tzatziki sauce, for serving (optional)
Instructions
- Combine Ingredients:
In a food processor, add chickpeas, parsley, garlic powder, bell pepper, and quartered red onion. Season with salt and pepper. - Pulse to Coarse Texture:
Process until the mixture is coarse. Scrape down the sides as needed. - Add Flour and Juice:
Mix in chickpea flour and lime juice. Process until the mixture just comes together. A few chunks are fine for texture. - Adjust Consistency:
If too dry, add 1 tablespoon of water at a time until the mixture holds together. - Shape and Cook Patties:
Divide into 6 equal portions. Roll and flatten each into a patty. Heat oil in a skillet over medium-high heat and fry until golden brown, 3–4 minutes per side. Drain on paper towels. - Serve:
Serve warm with Vegan Tzatziki on the side or on a fresh salad.
