Ingredients

1 tablespoon olive oil

4 thin chicken breasts (or 2 large sliced horizontally)

Salt and pepper, to taste

2 cups broccoli florets, blanched and chopped

6 strips bacon, cooked and chopped

⅓ cup shredded mozzarella cheese

1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 400°F. Grease casserole dish with olive oil.
  2. Season chicken with salt and pepper, and place in dish.
  3. Layer blanched broccoli over chicken.
  4. Sprinkle chopped bacon over broccoli.
  5. Add shredded mozzarella, then cheddar cheese on top.
  6. Bake uncovered for 25-30 minutes, until chicken is cooked through.
  7. Let rest 5 minutes before serving.

  • Blanching broccoli: This prevents sogginess and keeps the color vibrant.
