1 tablespoon olive oil
4 thin chicken breasts (or 2 large sliced horizontally)
Salt and pepper, to taste
2 cups broccoli florets, blanched and chopped
6 strips bacon, cooked and chopped
⅓ cup shredded mozzarella cheese
1 cup shredded cheddar cheese
Instructions
- Preheat oven to 400°F. Grease casserole dish with olive oil.
- Season chicken with salt and pepper, and place in dish.
- Layer blanched broccoli over chicken.
- Sprinkle chopped bacon over broccoli.
- Add shredded mozzarella, then cheddar cheese on top.
- Bake uncovered for 25-30 minutes, until chicken is cooked through.
- Let rest 5 minutes before serving.

- Blanching broccoli: This prevents sogginess and keeps the color vibrant.
- Chicken thickness: Adjust baking time based on thickness; thicker breasts may require a few extra minutes.
- Cheese options: You can substitute part of the cheddar with pepper jack or gouda for a different flavor.
