Walking Taco Casserole (Easy, Gluten-Free, Family Favorite!)

Ingredients

2 tbsp canola oil

1 large onion, diced

3 cloves garlic, minced

1 lb lean ground beef (90%)

1 oz taco seasoning (gluten-free)

1 (15 oz) can black beans, drained and rinsed

1 cup salsa

1 (9.25 oz) bag corn chips (Doritos, tortilla chips, or Fritos)

2 cups shredded cheddar cheese

Optional Toppings:

Shredded lettuce

Diced tomatoes

Jalapeños

Cilantro

Sour cream

Extra salsa


Instructions

  1. Preheat oven to 350°F (175°C).

  2. Heat canola oil in a large skillet. Add onion and sauté until soft, about 5 minutes. Add garlic and cook for another minute.

  3. Add ground beef and cook until browned. Drain fat if needed. Mix in taco seasoning.

  4. Stir in black beans and salsa; cook for 2–3 minutes.

  5. Layer half the corn chips in a greased baking dish. Add half the beef mixture and cheese. Repeat layers.

  6. Bake for 15–20 minutes, until cheese is melted and bubbly.

  7. Top with your favorite taco toppings and serve warm.

Notes

  • Avoid overbaking to keep the chips crunchy.
  • Use dairy-free cheese for a lactose-free version.
