Ingredients

4 ½ cups cubed sweet potatoes (about 1 ½ pounds)

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon ground cinnamon

1 tablespoon avocado oil (or olive oil)

1 pound lean ground beef

1 tablespoon tomato paste

1 tablespoon taco seasoning (store-bought or homemade)

2 cups low-fat cottage cheese

1 large avocado (or 2 small), sliced or cubed

4 tablespoons hot honey (store-bought or homemade — see note)

Instructions

  1. Roast the Sweet Potatoes

    • Preheat your oven to 425°F (220°C).

    • Place the cubed sweet potatoes on a large baking sheet.

    • Drizzle with avocado oil and sprinkle with salt, pepper, and cinnamon.

    • Toss to coat evenly and roast for 30 minutes, flipping halfway through, until golden and caramelized.

  2. Cook the Ground Beef

    • While the sweet potatoes roast, heat a non-stick skillet over medium-high heat.

    • Add the ground beef and cook until browned and crumbly, about 6–8 minutes.

    • Stir in the tomato paste and taco seasoning, mixing until the beef is evenly coated and flavorful.

  3. Assemble the Bowls

    • In each bowl, layer roasted sweet potatoes, a serving of ground beef, a scoop of cottage cheese, and sliced avocado.

    • Drizzle generously with warm hot honey.

  4. Serve and Enjoy!

    • Grab your fork and dig into this sweet, spicy, and savory bowl of perfection.

Notes

  • No Hot Honey? Make your own by mixing 4 tablespoons of honey with ¼ teaspoon red pepper flakes and warming it gently.
  • Meal Prep Friendly: Store beef and sweet potatoes separately in airtight containers for up to 4 days. Add avocado and hot honey fresh before serving.
  • Extra Flavor Boost: Sprinkle chopped green onions or cilantro on top before serving.
  • Dairy-Free Option: Use plant-based cottage cheese or dairy-free sour cream.
  • Make It Spicier: Add a dash of cayenne or chili flakes to the beef while cooking.
