Ingredients

2 large sweet onions

3 eggs

¾ cup almond flour

¾ cup Parmesan cheese

3 tbsp coconut flour

½ tsp salt

½ tsp pepper

½ tsp paprika

1 tsp dried parsley

Light olive oil, avocado oil, or lard for frying


Instructions

  1. Peel onions and trim ends. Slice into ¼-inch thick rings and separate. Set aside small rings for another use.
  2. Beat eggs in a bowl. In another bowl, combine almond flour, coconut flour, Parmesan, and spices.
  3. Coat each onion ring: egg → flour mixture → egg → flour mixture.
  4. Heat oil to 285°F (140°C). Test with one onion ring. Fry each ring about 1 minute per side until golden brown.
  5. Drain on paper towels and serve hot with your favorite dipping sauce.
