Description

A quick and wholesome rice bowl made with lean ground turkey simmered in a sweet and savory teriyaki-style sauce, combined with tender vegetables and served over fluffy rice. Perfect for weeknight dinners or meal prep.


Ingredients

Base

2 cups cooked white rice

1/2 small white onion, diced

1 teaspoon olive oil

Pinch of salt

1 tablespoon minced garlic

2 tablespoons freshly grated ginger

1 pound lean ground turkey

1 bag broccoli slaw mix

Sauce

1/3 cup low-sodium soy sauce

3 tablespoons brown sugar

1 tablespoon sesame oil

2 tablespoons honey

2 tablespoons cornstarch

2 tablespoons water

Toppings (Optional)

Creamy mayo-style sauce

Chili sauce

Lime wedges

Sliced green onions

Sesame seeds


Instructions

  1. Cook the rice according to package instructions and set aside.

  2. Heat a large skillet over medium heat. Add olive oil, diced onion, and a pinch of salt. Cook until the onion softens.

  3. Stir in garlic and ginger and cook briefly until fragrant.

  4. Add ground turkey to the skillet and break it apart. Cook until about halfway done.

  5. Add the broccoli slaw, cover, and let steam for a few minutes until softened.

  6. Push the turkey mixture to one side of the pan. Add soy sauce, brown sugar, honey, and sesame oil to the empty side. Stir until dissolved.

  7. In a small bowl, whisk cornstarch and water, then pour into the sauce.

  8. Stir everything together and simmer on low heat until the sauce thickens and coats the turkey evenly.

  9. Assemble bowls with rice, turkey mixture, and desired toppings. Serve warm.
