Ingredients
3 cups shredded rotisserie chicken
1/2 cup celery, finely chopped
3 tbsp green onion, thinly sliced
1/2 cup red onion, finely diced
1/2 cup avocado oil mayonnaise
1/4 cup plain Greek yogurt
1/4 cup buffalo sauce (adjust to taste)
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp sea salt
Dash of black pepper
Instructions
- Finely chop the celery, green onion, and red onion.
- Shred the rotisserie chicken into bite-sized pieces.
- In a small bowl, mix avocado oil mayonnaise, Greek yogurt, buffalo sauce, garlic powder, onion powder, sea salt, and black pepper until smooth.
- In a large bowl, combine the shredded chicken with the chopped vegetables.
- Pour the dressing over the mixture and stir until evenly coated.
- Serve immediately on greens, in a wrap, or with crackers, or store in an airtight container in the fridge for later.
Notes
- For a milder flavor, reduce the amount of buffalo sauce.
- Can be served warm or cold.
- Ideal for meal prep; keeps well in the fridge for up to 4 days.
- Add extra vegetables such as bell peppers or cucumber for crunch.
- Swap avocado oil mayo for regular mayonnaise if preferred.
