Ingredients
For the Pretzel Bites:
1 cup plain Greek-style yogurt (dairy or dairy-free)
3 tbsp melted butter or ghee
2 tbsp honey or maple syrup
1 ¼ cup gluten free 1:1 baking flour (Cup4Cup or Bob’s Red Mill 1-to-1 recommended)
2 tsp baking powder
½ tsp fine sea salt
For Topping:
1 egg, whisked (for egg wash)
Flaky sea salt, for sprinkling
Instructions

Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper.

Mix wet ingredients. In a large mixing bowl, whisk together yogurt, melted butter, and honey until smooth.

Add dry ingredients. Fold in the gluten free flour, baking powder, and sea salt using a sturdy spatula. Stir until a dough forms — it should be slightly tacky but not sticky.

Shape the dough. Lightly flour your work surface, then divide the dough into 5 equal portions. Roll each piece into a 6-inch log (about ¾-inch thick).

Cut into bites. Use a sharp knife or pastry cutter to slice each log into 1-inch bite-sized pieces.

Brush & season. Arrange the bites on the prepared baking sheet, brush each one with the whisked egg, and sprinkle with flaky sea salt.
