1 cup cottage cheese (2% or full-fat)
2 whole eggs

Instructions
- Preheat oven to 350°F (175°C). Line a quarter-sized baking sheet with parchment paper and lightly coat with olive oil or non-stick spray.
- In a blender or food processor, combine cottage cheese, eggs, and any seasonings. Blend until smooth. The batter should resemble thick pancake batter.
- Pour batter onto the prepared baking sheet and spread evenly to about 1/4 inch thickness.
- Bake for 35–40 minutes, or until golden brown and set.
- Let the flatbread cool completely on the baking sheet. Slice and enjoy plain or as a base for sandwiches, wraps, or mini pizzas.
