Ingredients

1 cup cottage cheese (2% or full-fat)

2 whole eggs

Optional seasonings: garlic powder, onion powder, dried herbs, salt, pepper


Instructions

  1. Preheat oven to 350°F (175°C). Line a quarter-sized baking sheet with parchment paper and lightly coat with olive oil or non-stick spray.
  2. In a blender or food processor, combine cottage cheese, eggs, and any seasonings. Blend until smooth. The batter should resemble thick pancake batter.
  3. Pour batter onto the prepared baking sheet and spread evenly to about 1/4 inch thickness.
  4. Bake for 35–40 minutes, or until golden brown and set.
  5. Let the flatbread cool completely on the baking sheet. Slice and enjoy plain or as a base for sandwiches, wraps, or mini pizzas.
