Ingredients
1 cup almond milk (or milk of choice)
1 ripe banana, frozen if possible
1 scoop vanilla protein powder (whey or plant-based)
½ cup packed fresh baby spinach (or ¼ cup frozen)
½ teaspoon peppermint extract (or a small handful fresh mint leaves)
½ cup ice cubes (optional for thickness)
1 tablespoon cocoa nibs or shaved chocolate (for topping, optional)
Instructions
- Add ingredients to blender: Combine almond milk, banana, protein powder, spinach, peppermint extract, and ice cubes in a high-speed blender. Keep cocoa nibs or chocolate aside for topping.
- Blend until smooth: Blend on high speed until the shake is completely smooth and creamy. Adjust thickness by adding more milk for a thinner shake or extra frozen banana/yogurt for a thicker texture. Taste and adjust sweetness with honey or agave if desired.
- Pour and garnish: Pour the shake into a tall glass or mason jar. Sprinkle cocoa nibs or shaved chocolate on top for a festive touch.
- Serve immediately: Enjoy fresh for the best creamy texture and vibrant color.
Notes
- Blend fresh for the thickest, frostiest shake—letting it sit can thin the texture.
- Use a high-speed blender to avoid green bits from the spinach.
- Add Greek yogurt for extra creaminess and protein. Plain or vanilla works well.
- Fresh mint leaves can replace extract for a brighter, natural mint flavor.
- Top with whipped cream (dairy or coconut) for an indulgent twist.
- Store leftovers in an airtight jar in the fridge for up to 1 day; re-blend with a splash of milk if needed.
- Freeze in popsicle molds for up to 1 month for a fun frozen treat.
