Ingredients

2 cups oat flour (store-bought or homemade from rolled oats)

2 tsp baking powder

1 tsp ground cinnamon

¼ tsp salt

3 large ripe bananas, mashed

¼ cup melted butter (or melted coconut oil for dairy-free)

¼ cup maple syrup (or honey)

3 large eggs

1 tsp vanilla extract (or almond extract)

Optional: ½ cup chocolate chips, nuts, or coconut flakes


Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan with butter, oil, or cooking spray. Line it with parchment paper for easy removal.

  2. Mix Dry Ingredients: In a large bowl, whisk together the oat flour, baking powder, cinnamon, and salt.

  3. Add Wet Ingredients: Stir in mashed bananas, melted butter, maple syrup, eggs, and vanilla extract until the mixture is smooth and well combined.

  4. Fold in Mix-ins: Gently stir in chocolate chips, nuts, or any desired add-ins.

  5. Bake: Pour the batter into the prepared pan and smooth the top. Bake for 45–55 minutes, or until the top springs back and a toothpick inserted in the center comes out clean.

  6. Cool: Let the loaf cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

  7. Slice & Enjoy: Once cooled, slice into 12 even pieces. Serve warm with butter, nut butter, or enjoy plain!

  • Homemade Oat Flour: Blend rolled oats in a blender or food processor until fine and powdery. Measure after blending.
