2 tsp baking powder
1 tsp ground cinnamon
¼ tsp salt
3 large ripe bananas, mashed
¼ cup melted butter (or melted coconut oil for dairy-free)
¼ cup maple syrup (or honey)
3 large eggs
1 tsp vanilla extract (or almond extract)
Optional: ½ cup chocolate chips, nuts, or coconut flakes

Preheat the oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan with butter, oil, or cooking spray. Line it with parchment paper for easy removal.

Mix Dry Ingredients: In a large bowl, whisk together the oat flour, baking powder, cinnamon, and salt.

Add Wet Ingredients: Stir in mashed bananas, melted butter, maple syrup, eggs, and vanilla extract until the mixture is smooth and well combined.

Fold in Mix-ins: Gently stir in chocolate chips, nuts, or any desired add-ins.

Bake: Pour the batter into the prepared pan and smooth the top. Bake for 45–55 minutes, or until the top springs back and a toothpick inserted in the center comes out clean.

Cool: Let the loaf cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
