Description
Tender chicken breasts baked over fresh orange slices and coated with a naturally sweet, citrusy glaze. This simple oven-baked dish is full of flavor, easy to prepare, and made without added salt.
Ingredients
4 medium chicken breasts (about 2 lbs / 900 g)
1 tablespoon extra virgin olive oil
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon black pepper
4 teaspoons orange-based fruit spread
2 fresh oranges, thinly sliced
Fresh herbs for garnish (parsley or cilantro)
Instructions
- Preheat the oven to 425°F (220°C). Thinly slice the oranges.
- Arrange half of the orange slices in an even layer in a 13 x 9-inch baking dish.
- Place the chicken breasts on top of the oranges and drizzle lightly with olive oil.
- In a small bowl, mix the garlic powder, onion powder, chili powder, smoked paprika, and black pepper.
- Sprinkle the spice mixture evenly over each chicken breast.
- Spread one teaspoon of the orange-based glaze over each chicken breast.
- Bake for 25–35 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
- Transfer to a serving plate, garnish with remaining orange slices and fresh herbs, and serve hot.
