Description

Tender chicken breasts baked over fresh orange slices and coated with a naturally sweet, citrusy glaze. This simple oven-baked dish is full of flavor, easy to prepare, and made without added salt.


Ingredients

4 medium chicken breasts (about 2 lbs / 900 g)

1 tablespoon extra virgin olive oil

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon black pepper

4 teaspoons orange-based fruit spread

2 fresh oranges, thinly sliced

Fresh herbs for garnish (parsley or cilantro)


Instructions

  1. Preheat the oven to 425°F (220°C). Thinly slice the oranges.
  2. Arrange half of the orange slices in an even layer in a 13 x 9-inch baking dish.
  3. Place the chicken breasts on top of the oranges and drizzle lightly with olive oil.
  4. In a small bowl, mix the garlic powder, onion powder, chili powder, smoked paprika, and black pepper.
  5. Sprinkle the spice mixture evenly over each chicken breast.
  6. Spread one teaspoon of the orange-based glaze over each chicken breast.
  7. Bake for 25–35 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  8. Transfer to a serving plate, garnish with remaining orange slices and fresh herbs, and serve hot.
