One-Pan Ground Turkey and Sweet Potato Skillet: Quick, Healthy, and Flavorful

Ingredients

2 tablespoons extra virgin olive oil

1 pound extra-lean ground turkey

1 teaspoon garlic, minced

½ cup diced onion

½ cup diced yellow bell pepper

1½ cups diced sweet potato

Salt and freshly ground black pepper, to taste

Pinch of red chili flakes (optional)

½ cup shredded mozzarella cheese (omit for Whole30/Paleo)

Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a cast iron skillet over medium-high heat.

  2. Add ground turkey and garlic. Break up the meat with a wooden spoon and cook for 5 minutes.

  3. Add onions and bell pepper; cook until onions are soft.

  4. Stir in sweet potatoes, salt, pepper, and chili flakes. Cover and cook until sweet potatoes are tender, stirring occasionally.

  5. Preheat oven to 400°F (200°C). Sprinkle mozzarella over the skillet and transfer to the oven to melt cheese, about 3–5 minutes.

  6. Remove from oven, garnish with parsley, and serve.

  • Sweet Potato Size: Dice small to ensure even cooking.
  • Skillet Size: Use a 9–10 inch skillet to prevent overcrowding.
