Ingredients
2 tablespoons extra virgin olive oil
1 pound extra-lean ground turkey
1 teaspoon garlic, minced
½ cup diced onion
½ cup diced yellow bell pepper
1½ cups diced sweet potato
Salt and freshly ground black pepper, to taste
Pinch of red chili flakes (optional)
½ cup shredded mozzarella cheese (omit for Whole30/Paleo)
Fresh parsley for garnish (optional)
Instructions

Heat olive oil in a cast iron skillet over medium-high heat.

Add ground turkey and garlic. Break up the meat with a wooden spoon and cook for 5 minutes.

Add onions and bell pepper; cook until onions are soft.

Stir in sweet potatoes, salt, pepper, and chili flakes. Cover and cook until sweet potatoes are tender, stirring occasionally.

Preheat oven to 400°F (200°C). Sprinkle mozzarella over the skillet and transfer to the oven to melt cheese, about 3–5 minutes.

Remove from oven, garnish with parsley, and serve.
