1 cup quick cook oats
1 cup vanilla protein powder
1/2 cup peanut butter or almond butter
1/3 cup maple syrup or honey
1 tablespoon chia seeds
1/4 teaspoon cinnamon
Pinch of salt
1 tablespoon water (more if needed)
1/2 cup dairy-free mini chocolate chips
Instructions

Line a baking sheet or tray with parchment paper.

In a large bowl, combine oats, protein powder, nut butter, sweetener, chia seeds, cinnamon, and salt until evenly mixed.

Add water gradually, mixing until a firm but workable dough forms.

Fold in the chocolate chips until evenly distributed.

Scoop and roll the mixture into bite-sized balls.

Place on the prepared tray and refrigerate for at least 30 minutes.

Store in an airtight container in the refrigerator.
Notes
- If the mixture is too sticky, chill it briefly before rolling.
- Seed butter can be used for a nut-free version.
- Dried fruit or shredded coconut can replace chocolate chips.
