Ingredients
3 large ripe bananas
3 large eggs
3 tbsp olive oil (or melted coconut oil)
1 ½ tbsp maple syrup
1 tsp vanilla extract
3 cups almond flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
Optional: a handful of dark chocolate chips for extra sweetness
Instructions
- Preheat & Prep Pan: Preheat your oven to 325°F (163°C). Line a 9-inch loaf pan with parchment paper, covering the sides well to prevent sticking.
- Mash Bananas & Add Wet Ingredients: In a large bowl, mash the bananas until smooth. Beat in the eggs, then stir in the oil, maple syrup, and vanilla extract until combined.
- Mix Dry Ingredients: In a separate bowl, whisk together the almond flour, baking powder, baking soda, salt, and cinnamon.
- Combine Wet & Dry: Gradually fold the dry ingredients into the wet mixture until the batter is smooth. Avoid overmixing to keep the bread tender.
- Bake: Pour the batter into the prepared loaf pan and spread evenly. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
- Cool: Let the bread cool in the pan for a few minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- This bread is lightly sweet; increase maple syrup if you prefer a sweeter loaf.
- Make sure to line the loaf pan completely to avoid sticking.
- Adding dark chocolate chips is a delicious optional addition.
