Ingredients

    • 1 lb (450 g) ground beef
    • 3 cups riced cauliflower (fresh or frozen)
    • ½ small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 cup sour cream
    • 1 cup heavy cream
    • 2 cups shredded cheddar cheese (divided)
    • 1 tsp salt
    • ½ tsp black pepper
    • ½ tsp smoked paprika
  • ½ tsp onion powder

    • ½ tsp garlic powder

 

    • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Cook the ground beef in a skillet with olive oil over medium heat until browned. Drain excess fat.

  3. Add onion and garlic; cook 2–3 minutes until fragrant.

  4. Steam or microwave the cauliflower rice until tender, then drain well.

  5. Combine beef, cauliflower rice, sour cream, heavy cream, 1½ cups cheddar, and seasonings in a large bowl. Stir to mix.

  6. Spread mixture evenly into a greased 9×13-inch baking dish.

  7. Top with remaining ½ cup cheddar cheese.

  8. Bake uncovered for 25–30 minutes until hot and bubbly.

  9. Cool slightly, then serve warm.

Notes

  • Drain your beef well — excess grease can make the casserole oily.

  • Don’t skip draining the cauliflower rice — removing moisture keeps the casserole firm and not watery.

  • For a creamier texture, mix in 2 oz of cream cheese with the sour cream and heavy cream.

  • Add spice! Try a pinch of cayenne, chili flakes, or jalapeño for a little kick.

  • This casserole freezes perfectly — store individual portions in airtight containers for up to 3 months.

  • Reheat in the oven at 350°F for 15–20 minutes or in the microwave until hot.
