Description

This Keto Chicken Broccoli Casserole is a rich, creamy, and comforting low-carb dinner that comes together in just 25 minutes. Loaded with tender chicken, vibrant broccoli, and a cheesy Alfredo sauce, it’s the perfect high-protein one-pan meal for busy weeknights.

Ingredients

2 cups cooked chicken, shredded or cubed

16 oz broccoli florets (about 3 cups)

1 cup heavy whipping cream

1 ½ cups mozzarella cheese, divided

½ cup freshly grated Parmesan cheese

3 tablespoons butter

2 cloves garlic, minced

½ teaspoon salt, or to taste

¼ teaspoon black pepper

Optional: pinch of red pepper flakes or cooked bacon bits for extra flavor

Instructions

  1. Sauté the Broccoli

    • Melt 1 tablespoon of butter in a large oven-safe skillet over medium heat.

    • Add broccoli florets and cook for 3–4 minutes until bright green and just tender.

    • Remove from the pan and set aside.

  2. Make the Alfredo Sauce

    • Add the remaining 2 tablespoons butter to the same skillet.

    • Stir in minced garlic and cook for 30 seconds until fragrant.

    • Pour in heavy cream and let it simmer 3–4 minutes, stirring occasionally, until slightly reduced.

  3. Add the Cheese

    • Lower the heat and add Parmesan and 1 cup of mozzarella.

    • Stir until melted and smooth. Season with salt and pepper.

  4. Combine Chicken and Broccoli

    • Return broccoli to the skillet and add cooked chicken.

    • Mix until everything is evenly coated with sauce.

  5. Top and Broil

    • Sprinkle the remaining ½ cup mozzarella on top.

    • Broil 2–3 minutes or bake at 400°F (200°C) until the cheese is golden and bubbly.

  6. Serve & Enjoy

    • Let cool slightly before serving. This dish pairs perfectly with a simple green salad or cauliflower rice.

Notes

  • Make-Ahead Option: Assemble the casserole up to 2 days in advance. Cover and refrigerate until ready to bake.
  • Frozen Broccoli Tip: If using frozen broccoli, thaw completely and skip the sauté step — add it straight to the sauce.
  • Extra Creaminess: Add 2 oz cream cheese to the sauce if you prefer a thicker texture.
  • Storage: Store leftovers in an airtight container for up to 5 days. Reheat in the oven or microwave until hot.
  • Freezer Friendly: Freeze portions for up to 2 months. Thaw overnight in the fridge before reheating.
