Irresistible Bacon-Wrapped Dates Stuffed with Goat Cheese

Ingredients

4-6 ounces goat cheese

12-16 ounces Medjool dates

6-8 ounces center-cut bacon, regular sliced (not thick)

Toothpicks

Honey or hot honey for drizzling (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice each date lengthwise to create a pocket. Remove pits if needed.
  3. Fill each date with goat cheese.
  4. Cut bacon slices in half (~5-inch pieces). Wrap each stuffed date with bacon and secure with a toothpick.
  5. Place on a rimmed baking sheet lined with parchment paper.
  6. Bake for 10 minutes, flip, bake 5 minutes, flip again and bake a few more minutes until bacon is crispy.
  7. Cool slightly and drizzle with honey if desired. Serve warm.

Notes

  • Use thin-sliced bacon for even cooking.
  • Fresh Medjool dates are ideal for sweetness and texture.
  • Can be assembled up to 2 days ahead and baked before serving.
