Ingredients
4-6 ounces goat cheese
12-16 ounces Medjool dates
6-8 ounces center-cut bacon, regular sliced (not thick)
Toothpicks
Honey or hot honey for drizzling (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Slice each date lengthwise to create a pocket. Remove pits if needed.
- Fill each date with goat cheese.
- Cut bacon slices in half (~5-inch pieces). Wrap each stuffed date with bacon and secure with a toothpick.
- Place on a rimmed baking sheet lined with parchment paper.
- Bake for 10 minutes, flip, bake 5 minutes, flip again and bake a few more minutes until bacon is crispy.
- Cool slightly and drizzle with honey if desired. Serve warm.

- Use thin-sliced bacon for even cooking.
- Fresh Medjool dates are ideal for sweetness and texture.
