Ingredients

Dough

1¼ cups all-purpose flour

1 cup blended cottage cheese (2% or higher)

2 tablespoons maple syrup

1½ teaspoons baking powder

Filling

¼ cup light brown sugar

1 tablespoon protein powder (vanilla or unflavored)

1 tablespoon ground cinnamon

Frosting

2 tablespoons cream cheese, softened

¼ cup blended cottage cheese

1 tablespoon maple syrup

Optional

1 tablespoon melted butter


Instructions

  1. Preheat oven: 350°F (175°C) and line a small baking sheet with parchment paper.
  2. Make dough: Mix flour, blended cottage cheese, maple syrup, and baking powder. Knead until smooth. Roll into a 4×8-inch rectangle.
  3. Prepare filling: Mix brown sugar, protein powder, and cinnamon. Spread evenly over dough.
  4. Roll and cut: Roll dough lengthwise into a log. Cut into 4 equal rolls. Seal edges with a little water.
  5. Bake: Place rolls on the baking sheet and bake for 20–22 minutes until golden.
  6. Make frosting: Blend cream cheese, cottage cheese, and maple syrup until smooth. Brush rolls with melted butter (optional), then frost before serving.
