Dough
1¼ cups all-purpose flour
1 cup blended cottage cheese (2% or higher)
2 tablespoons maple syrup
1½ teaspoons baking powder
Filling
¼ cup light brown sugar
1 tablespoon protein powder (vanilla or unflavored)
1 tablespoon ground cinnamon
Frosting
2 tablespoons cream cheese, softened
¼ cup blended cottage cheese
1 tablespoon maple syrup
Optional
1 tablespoon melted butter
Instructions
- Preheat oven: 350°F (175°C) and line a small baking sheet with parchment paper.
- Make dough: Mix flour, blended cottage cheese, maple syrup, and baking powder. Knead until smooth. Roll into a 4×8-inch rectangle.
- Prepare filling: Mix brown sugar, protein powder, and cinnamon. Spread evenly over dough.
- Roll and cut: Roll dough lengthwise into a log. Cut into 4 equal rolls. Seal edges with a little water.
- Bake: Place rolls on the baking sheet and bake for 20–22 minutes until golden.
- Make frosting: Blend cream cheese, cottage cheese, and maple syrup until smooth. Brush rolls with melted butter (optional), then frost before serving.
Notes
- Frost just before serving for best results.
- Use higher-fat cottage cheese for better texture.
- Rolls freeze well; thaw completely before baking.
- Optional flavor variations: nuts, chocolate chips, fruit, or pistachio butter.
