Ingredients

1/2 cup full-fat cottage cheese (drained if watery)

2 whole eggs

1/2 teaspoon garlic powder (optional)

1/2 teaspoon onion powder (optional)

1/2 teaspoon dried oregano (optional, for garnish)

Salt and pepper to taste (optional)


Instructions

  1. Preheat Oven: Set your oven to 350°F (177°C). Line a quarter-sheet pan with parchment paper and lightly spray with cooking oil.
  2. Blend Ingredients: In a blender or food processor, combine cottage cheese, eggs, garlic powder, and onion powder. Blend until smooth.
  3. Pour & Spread: Pour the batter onto the prepared pan and spread it evenly. Sprinkle with oregano or other desired herbs.
  4. Bake: Bake for 30-35 minutes, checking at 30 minutes to ensure it’s not over-browning. The flatbread is done when the edges are golden brown and slightly crispy.
  5. Cool & Serve: Let it rest for 5 minutes before slicing. Use as a wrap, sandwich base, or pizza crust.

  • Pan Size: A quarter-sheet pan is ideal; if unavailable, use a small section of a larger sheet pan to maintain thickness.
