Ingredients

3 chicken breasts, tenderized

2 tsp olive oil

Salt, garlic powder, onion powder, Italian herb blend (to taste)

1/2 heaping cup marinara sauce, divided

1/2 heaping cup cottage cheese, divided

4 oz freshly grated parmesan, divided

Optional garnish: fresh parsley, chili flakes


Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Place tenderized chicken breasts on the baking sheet. Coat with olive oil and season on both sides with salt, garlic powder, onion powder, and Italian herbs.
  3. Bake chicken for 15 minutes, or until the internal temperature reaches 165°F.
  4. Remove from oven. Top each chicken breast with marinara sauce, 3 tablespoons cottage cheese, and a generous layer of parmesan.
  5. Return to oven for 5-7 minutes until cheese is melted and golden.
  6. Garnish with fresh parsley or chili flakes and serve with your favorite side.
