Ingredients
1 ½ cups flour (all-purpose, spelt, or oat)
½ cup protein powder (about 60g)
1 tsp baking soda
¾ tsp baking powder
¾ tsp salt
½ tsp cinnamon (optional)
1 ½ cups mashed ripe banana (about 3 bananas)
½ cup yogurt (or additional mashed banana)
½ cup maple syrup, honey, or agave
⅓ cup oil or water
2 tsp pure vanilla extract
Optional: chocolate chips, chopped nuts, or coconut
Instructions
- Preheat oven to 350°F (175°C).
- Grease and line a 9×5 loaf pan.
- Mash bananas in a large bowl.
- Stir in yogurt, sweetener, oil, and vanilla.
- Add dry ingredients and mix gently.
- Transfer batter to pan and smooth top.
- Bake 40 minutes.
- Turn oven off and let sit inside 5 minutes.
- If needed, bake an additional 5–10 minutes.
- Cool completely before slicing.
Notes
- Use ripe bananas for the best flavor.
- Do not substitute coconut flour or almond flour in this version.
- Plant-based protein keeps the loaf softer; whey may produce a slightly firmer crumb.
- Flavor improves after resting overnight.
- You can reduce sweetener slightly if your protein powder is already sweetened.
