High Protein Banana Bread (Soft, Moist & Packed with 10g Protein Per Slice)

Ingredients

1 ½ cups flour (all-purpose, spelt, or oat)

½ cup protein powder (about 60g)

1 tsp baking soda

¾ tsp baking powder

¾ tsp salt

½ tsp cinnamon (optional)

1 ½ cups mashed ripe banana (about 3 bananas)

½ cup yogurt (or additional mashed banana)

½ cup maple syrup, honey, or agave

⅓ cup oil or water

2 tsp pure vanilla extract

Optional: chocolate chips, chopped nuts, or coconut


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and line a 9×5 loaf pan.
  3. Mash bananas in a large bowl.
  4. Stir in yogurt, sweetener, oil, and vanilla.
  5. Add dry ingredients and mix gently.
  6. Transfer batter to pan and smooth top.
  7. Bake 40 minutes.
  8. Turn oven off and let sit inside 5 minutes.
  9. If needed, bake an additional 5–10 minutes.
  10. Cool completely before slicing.

Notes

  • Use ripe bananas for the best flavor.
  • Do not substitute coconut flour or almond flour in this version.
  • Plant-based protein keeps the loaf softer; whey may produce a slightly firmer crumb.
  • Flavor improves after resting overnight.
  • You can reduce sweetener slightly if your protein powder is already sweetened.
