Ingredients

Meats

4 ounces bacon, diced

12-ounce package hotdogs or sausage, cut into pieces

1 pound beef, cut into 1-inch cubes

Vegetables

1 onion, sliced

2 cloves garlic, minced

1 green pepper, sliced

1 red pepper, sliced

Flavor Enhancers

2 tablespoons gluten-free all-purpose flour

1 teaspoon basil

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon pepper

Liquid Base

1 cup gluten-free beef broth


Instructions

  1. Heat a large Dutch oven over medium-high heat. Add bacon and cook until crisp. Remove with a slotted spoon, leaving the bacon fat in the pot.

  2. Brown the beef and hotdogs (or sausage) in batches until seared on all sides. Avoid overcrowding. Transfer to a bowl.

  3. Add onion and garlic to the pot, cooking for about 2 minutes until fragrant.

  4. Stir in flour and cook until lightly browned, about 1 minute.

  5. Add peppers, seasonings, and broth. Return beef and bacon to the pot, stir to combine.

  6. Bring to a boil, cover, and reduce heat. Simmer for 1½–2 hours, until beef is tender. Serve hot.
