Ingredients
½ cup pitted dates
1 cup raw cashews
1 cup fresh strawberries
¼ cup coconut oil, softened
1 teaspoon pure vanilla extract
2 tablespoons coconut flour
¼ cup coconut flakes (optional)
Instructions
- Add all ingredients except coconut flakes into a food processor.
- Blend until smooth and thick.
- Let the mixture rest for 10 minutes.
- Roll into 12 balls.
- Roll in coconut flakes if desired.
- Place on parchment paper and freeze for at least 2 hours.
- Let stand at room temperature for about 10 minutes before serving.
Notes
- Use fresh strawberries for best texture. Frozen strawberries may create excess moisture.
- Do not soak the cashews before blending.
