Ingredients

½ cup pitted dates

1 cup raw cashews

1 cup fresh strawberries

¼ cup coconut oil, softened

1 teaspoon pure vanilla extract

2 tablespoons coconut flour

¼ cup coconut flakes (optional)


Instructions

  1. Add all ingredients except coconut flakes into a food processor.
  2. Blend until smooth and thick.
  3. Let the mixture rest for 10 minutes.
  4. Roll into 12 balls.
  5. Roll in coconut flakes if desired.
  6. Place on parchment paper and freeze for at least 2 hours.
  7. Let stand at room temperature for about 10 minutes before serving.

Notes

  • Use fresh strawberries for best texture. Frozen strawberries may create excess moisture.
  • Do not soak the cashews before blending.
