Ingredients
1 cup chopped pecans
1/2 cup chopped cashews
1 1/2 cups unsweetened coconut flakes
1 1/2 cups chopped vegan graham crackers (about 4–5 sheets)
3/4 cup dairy-free chocolate chips
1/4 tsp sea salt
3/4 cup sweetened condensed coconut milk (recommended: Nature’s Charm or any thick vegan version)
Instructions

Preheat the oven to 350°F (175°C).
Prepare a silicone muffin pan for easy removal. If you don’t have one, line a regular muffin pan with paper liners and lightly spray with oil. -
Mix the dry ingredients:
In a large bowl, combine the chopped pecans, cashews, coconut flakes, graham crackers, chocolate chips, and sea salt. Stir well to distribute everything evenly. -
Add the wet ingredient:
Pour in the sweetened condensed coconut milk. Use a spatula to fold until all ingredients are coated and evenly mixed. -
Scoop into muffin pan:
Divide the mixture evenly between muffin cups, pressing down gently to compact them. -
Bake:
Bake for 15–18 minutes, or until golden brown around the edges. -
Cool and set:
Allow to cool completely in the pan, then transfer to the fridge to set for at least 2 hours. This step is key for that chewy, gooey texture. -
