With only 7 simple ingredients and one mixing bowl, this recipe is ideal for busy days when you still crave something homemade and satisfying.


Ingredients

1 cup chopped pecans

1/2 cup chopped cashews

1 1/2 cups unsweetened coconut flakes

1 1/2 cups chopped vegan graham crackers (about 45 sheets)

3/4 cup dairy-free chocolate chips

1/4 tsp sea salt

3/4 cup sweetened condensed coconut milk (recommended: Nature’s Charm or any thick vegan version)


Instructions

  1. Preheat the oven to 350°F (175°C).
    Prepare a silicone muffin pan for easy removal. If you don’t have one, line a regular muffin pan with paper liners and lightly spray with oil.

  2. Mix the dry ingredients:
    In a large bowl, combine the chopped pecans, cashews, coconut flakes, graham crackers, chocolate chips, and sea salt. Stir well to distribute everything evenly.

  3. Add the wet ingredient:
    Pour in the sweetened condensed coconut milk. Use a spatula to fold until all ingredients are coated and evenly mixed.

  4. Scoop into muffin pan:
    Divide the mixture evenly between muffin cups, pressing down gently to compact them.

  5. Bake:
    Bake for 15–18 minutes, or until golden brown around the edges.

  6. Cool and set:
    Allow to cool completely in the pan, then transfer to the fridge to set for at least 2 hours. This step is key for that chewy, gooey texture.

  7. Enjoy:
    Pop the cookie cups out of the molds and serve! Store leftovers in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
