Healthy Banana Bread with Maple Syrup and Whole Wheat Flour

Ingredients

2 cups mashed very ripe bananas (about 4 large)

1/2 cup pure maple syrup

1/2 cup melted coconut oil (plus extra for greasing pan)

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour (spooned and leveled)

3/4 cup whole wheat flour (spooned and leveled)

1 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon sea salt

1/2 cup chopped walnuts

2 tablespoons rolled oats (optional topping)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  2. In a large bowl, whisk together mashed bananas, maple syrup, coconut oil, eggs, and vanilla.
  3. In another bowl, whisk together flours, baking soda, cinnamon, nutmeg, and salt.
  4. Add dry ingredients to wet ingredients and mix until just combined. Fold in walnuts.
  5. Pour batter into the prepared pan and sprinkle oats on top.
  6. Bake for 50–65 minutes, tenting with foil if needed.
  7. Cool before slicing and serving.

Notes

  • Use overripe bananas for best sweetness.
  • Do not overmix the batter.
  • For muffins, bake 20–25 minutes.
  • Store slices individually wrapped for easy freezing.
