Ingredients
2 cups mashed very ripe bananas (about 4 large)
1/2 cup pure maple syrup
1/2 cup melted coconut oil (plus extra for greasing pan)
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour (spooned and leveled)
3/4 cup whole wheat flour (spooned and leveled)
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon sea salt
1/2 cup chopped walnuts
2 tablespoons rolled oats (optional topping)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a loaf pan.
- In a large bowl, whisk together mashed bananas, maple syrup, coconut oil, eggs, and vanilla.
- In another bowl, whisk together flours, baking soda, cinnamon, nutmeg, and salt.
- Add dry ingredients to wet ingredients and mix until just combined. Fold in walnuts.
- Pour batter into the prepared pan and sprinkle oats on top.
- Bake for 50–65 minutes, tenting with foil if needed.
- Cool before slicing and serving.
Notes
- Use overripe bananas for best sweetness.
- Do not overmix the batter.
- For muffins, bake 20–25 minutes.
- Store slices individually wrapped for easy freezing.
