Ingredients

3 medium ripe bananas (about 1 1/4 cups mashed)

2 large eggs

1/4 cup pure maple syrup (or honey)

1 teaspoon baking soda

2 cups old-fashioned rolled oats


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 9×5-inch loaf pan.
  3. Add all ingredients to a blender in the order listed.
  4. Blend until smooth and just combined.
  5. Pour batter into prepared loaf pan.
  6. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow loaf to cool completely before slicing and serving.

Notes

  • 3 medium bananas equal approximately 1 pound or 1 1/4 cups mashed.
  • Oven temperatures vary, so begin checking at 30 minutes. Some ovens may require up to 40 minutes.
  • Do not over-blend the batter to prevent texture changes.
  • For added texture, fold in dark chocolate chips or chopped nuts after blending.
