Ingredients
3 medium ripe bananas (about 1 1/4 cups mashed)
2 large eggs
1/4 cup pure maple syrup (or honey)
1 teaspoon baking soda
2 cups old-fashioned rolled oats
Instructions
- Preheat oven to 350°F (175°C).
- Lightly grease a 9×5-inch loaf pan.
- Add all ingredients to a blender in the order listed.
- Blend until smooth and just combined.
- Pour batter into prepared loaf pan.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow loaf to cool completely before slicing and serving.
Notes
- 3 medium bananas equal approximately 1 pound or 1 1/4 cups mashed.
- Oven temperatures vary, so begin checking at 30 minutes. Some ovens may require up to 40 minutes.
- Do not over-blend the batter to prevent texture changes.
- For added texture, fold in dark chocolate chips or chopped nuts after blending.
- For a slightly sweeter loaf, increase maple syrup to 1/3 cup.
