Ingredients
6 ounces shredded cooked chicken (breast or thigh)
1/2 cup plain Greek yogurt
1-inch piece fresh turmeric, grated (*see notes for dried turmeric)
1 stalk celery, finely chopped
1 tablespoon fresh tarragon, chopped
2 tablespoons raisins
1/4 teaspoon cinnamon
1/2 tablespoon sugar
Salt and pepper, to taste
Instructions
- In a medium bowl, combine shredded chicken, Greek yogurt, grated turmeric, celery, tarragon, raisins, cinnamon, and sugar.
- Mix well until all ingredients are evenly incorporated.
- Season with salt and pepper to taste.
- Serve on toasted bread, in lettuce wraps, or over a bed of greens.
Notes
- Fresh turmeric can be replaced with 1/2 teaspoon dried ground turmeric (flavor will differ slightly).
- Raisins can be swapped for dried cranberries, cherries, or golden raisins.
- Lettuce wraps are perfect for a low-carb version.
