Golden Turmeric Chicken Salad: A Fresh Twist on a Classic Lunch

Ingredients

6 ounces shredded cooked chicken (breast or thigh)

1/2 cup plain Greek yogurt

1-inch piece fresh turmeric, grated (*see notes for dried turmeric)

1 stalk celery, finely chopped

1 tablespoon fresh tarragon, chopped

2 tablespoons raisins

1/4 teaspoon cinnamon

1/2 tablespoon sugar

Salt and pepper, to taste


Instructions

  1. In a medium bowl, combine shredded chicken, Greek yogurt, grated turmeric, celery, tarragon, raisins, cinnamon, and sugar.
  2. Mix well until all ingredients are evenly incorporated.
  3. Season with salt and pepper to taste.
  4. Serve on toasted bread, in lettuce wraps, or over a bed of greens.

Notes

  • Fresh turmeric can be replaced with 1/2 teaspoon dried ground turmeric (flavor will differ slightly).
  • Raisins can be swapped for dried cranberries, cherries, or golden raisins.
  • Lettuce wraps are perfect for a low-carb version.
