2 tablespoons extra virgin olive oil
6 cloves garlic, thinly sliced
1 pound fresh baby spinach leaves
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice or vinegar (optional)
Instructions
- Add olive oil and sliced garlic to a cold large skillet. Heat over medium heat until garlic becomes fragrant and lightly golden. Remove garlic slices with a skimmer and reserve the oil.
- Add the spinach in batches, tossing in the garlic-infused oil. Season with salt and pepper. Cook until just wilted.
- Return garlic slices to the pan, toss with the spinach, and drizzle with lemon juice or vinegar if desired. Taste and adjust seasoning. Serve immediately.
