These frozen chocolate peanut butter oat bites are an easy no-bake snack or dessert made with simple pantry ingredients. Chewy, chocolatey, and satisfying, they taste like cookie dough straight from the freezer while delivering fiber, healthy fats, and protein in every bite.
Ingredients
For the oat bites
2 cups rolled oats
¼ cup ground flaxseed
½ teaspoon sea salt
½ cup natural peanut butter
⅓ cup honey or pure maple syrup
1 teaspoon vanilla extract
For the chocolate coating
½ cup chocolate chips
1 teaspoon coconut oil
1 teaspoon peanut butter
Instructions

In a medium bowl, mix the oats, ground flaxseed, and sea salt until well combined.

Add the peanut butter, sweetener, and vanilla extract. Stir until a thick dough forms.

Lightly wet your hands and roll the mixture into 20 evenly sized balls. Place them on a lined baking sheet.

Transfer the baking sheet to the freezer while preparing the chocolate coating.

In a small bowl, combine chocolate chips, coconut oil, and peanut butter. Melt in short intervals, stirring between each, until smooth.

Remove the bites from the freezer and dip each one into the melted chocolate.

Place the coated bites back on the baking sheet and sprinkle lightly with flaky salt if desired.

Freeze for 30 minutes, or until the chocolate is fully set. Store in the freezer or refrigerator.
Notes
- Honey makes the mixture easier to roll due to its stickiness.
- If using maple syrup, keep a bowl of water nearby to wet your hands frequently.
- For a thicker chocolate coating, increase chocolate chips to ¾ cup.
