Ingredients
6 skinless, boneless chicken breasts (4 oz each, raw)
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon seasoned salt
2 tablespoons light butter made with plant-based oils
1 medium yellow onion, peeled and thinly sliced
1 (10 oz) can French onion soup
1 cup low-sodium beef broth
1/2 cup fat-free or reduced-fat mozzarella cheese, shredded
Instructions
- Preheat the oven to 350°F.
- In a large skillet or cast-iron pan, melt the butter over medium heat. Add the sliced onions and sauté until softened and translucent. Remove onions from the skillet and set aside.
- Lightly coat the same skillet with nonstick cooking spray.
- Season the chicken breasts evenly with paprika, garlic powder, and seasoned salt.
- Place the chicken in the skillet and cook over medium-high heat for 5–7 minutes per side, or until lightly golden.
- Add the cooked onions back into the skillet with the chicken.
- Pour in the French onion soup and beef broth. Simmer for 2–3 minutes to allow flavors to combine.
- Sprinkle the mozzarella evenly over each chicken breast.
- Transfer the skillet to the oven, or move everything to an oven-safe baking dish if needed.
- Bake for 10–15 minutes, or until the cheese is melted and the sauce is bubbly.
