These light and fluffy egg white bites are a simple, protein-rich breakfast that’s easy to prepare at home. Made with cottage cheese, sweet peppers, green onions, and cheddar cheese, they bake into soft, savory bites that are perfect for meal prep or busy mornings.


Ingredients

8 large egg whites (about 1⅔ cups)

⅓ cup cottage cheese

Garlic salt, to taste

Black pepper, to taste

¼ cup finely diced bell pepper

2 green onions, thinly sliced

¼ cup shredded cheddar cheese


Instructions

  1. Preheat the oven
    Preheat the oven to 350°F (175°C).
  2. Prepare the egg mixture
    In a medium bowl, combine the egg whites, cottage cheese, garlic salt, and black pepper. Whisk until the mixture is smooth and slightly airy.
  3. Add vegetables and cheese
    Stir in the diced bell pepper, green onions, and shredded cheddar cheese until evenly distributed.
  4. Fill the muffin cups
    Divide the mixture evenly among eight silicone muffin cups or a lightly greased muffin tin.
  5. Bake
    Bake for 20–25 minutes, or until the egg bites are fully set in the center.
  6. Cool and remove
    Allow the egg bites to cool for several minutes before removing them from the cups. Serve warm or store for later.
