Easy Cheesy Mozzarella Chicken Bake (Weeknight Favorite)

Ingredients

4 large boneless, skinless chicken breasts

2 tablespoons olive oil

1/2 teaspoon garlic powder

Salt, to taste

Black pepper, to taste

1 1/2 cups marinara sauce (good-quality jarred or homemade)

1/2 cup freshly grated parmesan cheese

1 cup shredded mozzarella cheese


Instructions

  1. Preheat the oven to 375°F (190°C). Place the oven rack in the middle position.
  2. Prepare the chicken. Pat the chicken breasts dry with paper towels. Season both sides evenly with garlic powder, salt, and black pepper.
  3. Sear the chicken. Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts. Sear for about 5 minutes per side, or until a golden crust forms. The chicken does not need to be fully cooked at this stage.
  4. Transfer to baking dish. Lightly grease a 9×13-inch baking dish. Arrange the seared chicken breasts in a single layer.
  5. Add the marinara sauce. Spoon the sauce evenly over each piece of chicken, spreading it gently so the tops are well coated.
  6. Add the cheese. Sprinkle the grated parmesan evenly over the chicken, then top with shredded mozzarella.
  7. Bake uncovered for about 20 minutes. If your chicken breasts are smaller or thinner, begin checking at 15 minutes. The chicken is done when it reaches an internal temperature of 165°F (74°C).
  8. Broil briefly for 2–3 minutes, just until the cheese is lightly golden and bubbly. Keep a close eye to prevent burning.
  9. Rest before serving. Allow the chicken to rest for 5 minutes before slicing or serving to retain juices.

Notes

  • Skipping the sear: If you prefer, you can place the raw seasoned chicken directly into the baking dish. Add sauce and cheese as directed and bake for at least 30 minutes, or until the internal temperature reaches 165°F.
  • Chicken size matters: Cooking time will vary depending on thickness. Using an instant-read thermometer ensures accurate results and prevents overcooking.
  • Cheese options: Provolone, fontina, or an Italian cheese blend can be used in place of mozzarella for a slightly different flavor profile.
  • Make it ahead: You can assemble the dish (without baking) up to 8 hours in advance. Cover and refrigerate, then bake when ready.
  • Storage: Store leftovers in an airtight container in the refrigerator for 3–4 days. Reheat gently to maintain moisture. Freezing is not recommended due to changes in cheese texture.
