Ingredients

1 pound vine-ripened tomatoes, diced (~2 1/2 cups)

2/3 cup red onion, diced (or one medium onion)

12 fresh jalapeños, deseeded and finely diced

1/2 cup fresh cilantro, chopped

1 lime, juiced

1 teaspoon salt

1/2 teaspoon ground black pepper

Tortilla chips (optional, to serve)


Instructions

  1. In a large bowl, combine tomatoes, red onion, jalapeños, cilantro, and lime juice. Season with salt and black pepper.
  2. Taste and adjust seasoning if necessary.
  3. Cover the bowl and refrigerate for 20–30 minutes to allow flavors to meld.
