Ingredients
3 cups diced cooked chicken (about 1 pound raw)
1½ cups broccoli slaw (or shredded cabbage/coleslaw mix)
½ medium red bell pepper, diced
¼ cup sliced or slivered almonds, toasted
2 green onions, chopped
For the Dressing
½ teaspoon orange zest
3 tablespoons fresh orange juice
3 tablespoons coconut aminos
2 tablespoons almond butter or peanut butter
2 teaspoons toasted sesame oil
1 teaspoon rice vinegar
1 garlic clove, minced (or ½ teaspoon garlic powder)
½ teaspoon freshly grated ginger (or ¼ teaspoon ground ginger)
Salt and black pepper, to taste
For Serving (Optional)
Lettuce leaves, tortillas, or salad greens
½ avocado, sliced or diced
Fresh cilantro
Sesame seeds
Extra green onions or toasted almonds
Instructions
- In a large bowl, combine chicken, broccoli slaw, bell pepper, toasted almonds, and green onions.
- In a separate small bowl, whisk together all dressing ingredients until smooth.
- Pour dressing over the salad mixture and toss until evenly coated.
- Serve in lettuce wraps, over greens, or in tortillas. Garnish as desired.
