Crispy Keto Salami Cups with Avocado and Tomatoes

Ingredients

12 slices hard salami (or Genoa/pepperoni)

1 ripe avocado, chopped

½ cup grape tomatoes, halved


Instructions

  1. Preheat oven to 375°F (190°C). Spray a muffin tin with nonstick cooking spray.
  2. Cut two slits in each salami slice (top and bottom). Place slices in the muffin tin, overlapping edges to form a cup shape.
  3. Bake 10–15 minutes until crispy but not burnt. Check at 10 minutes. Remove and let cool slightly.
  4. While baking, chop avocado and halve tomatoes.
  5. Once cooled, fill salami cups with avocado and tomato mixture. Serve immediately.
