Ingredients

For the Spinach

1 tablespoon olive oil

8 oz fresh spinach (or thawed frozen spinach, drained)

Salt and black pepper, to taste

For the Gnocchi & Sauce

16 oz potato gnocchi (shelf-stable or refrigerated)

½ cup chicken broth (or vegetable broth)

1 cup heavy cream (or half-and-half for a lighter version)

4 cloves garlic, minced

½ teaspoon Italian seasoning (or Herbes de Provence)

½ teaspoon smoked paprika (add more to taste)

¼ teaspoon salt, or to taste

Coarsely ground black pepper, to taste

Red pepper flakes, to taste


Instructions

Step 1: Cook the Spinach

  1. Heat olive oil in a large, high-sided skillet over medium heat.

  2. Add spinach with a pinch of salt and pepper.

  3. Sauté for 3–5 minutes, stirring occasionally, until wilted.

  4. Remove spinach from the pan and set aside on a plate.

Step 2: Make the Sauce & Cook the Gnocchi

  1. In the same skillet, add uncooked gnocchi, chicken broth, heavy cream, garlic, Italian seasoning, smoked paprika, and salt.

  2. Stir well and bring the mixture to a gentle boil over medium heat.

  3. Cover the pan and cook for 5 minutes, stirring once or twice, until the gnocchi are soft and the sauce begins to thicken.

Step 3: Combine & Serve

  1. Return the cooked spinach to the skillet.

  2. Stir everything together on low heat for 2–3 minutes, allowing the sauce to thicken and coat the gnocchi.

  3. Season with additional black pepper, smoked paprika, and red pepper flakes if desired.

  4. Serve warm with grated Parmesan cheese and a sprinkle of fresh herbs.

Notes

  • The sauce thickens as it cools. If needed, add a splash of cream, milk, or broth before serving.
  • For best texture, avoid overcooking the gnocchi — it should stay soft and slightly chewy.
  • This dish is best enjoyed fresh, but leftovers reheat beautifully for a quick lunch the next day.
