¾ cup cooked bacon bits
7 large eggs
1 cup small-curd cottage cheese
1 cup shredded Colby jack cheese (or your preferred cheese)
¼ tsp salt
¼ tsp black pepper

Instructions
- Preheat Oven: Set your oven to 325℉ (163℃). Place a shallow pan of water on the lower rack to keep the egg bites moist.
- Prepare Egg Mixture: In a medium bowl, whisk the eggs until smooth. Fold in cottage cheese, shredded cheese, bacon bits, salt, and pepper until fully combined.
- Grease Muffin Pan: Spray a 12-cup muffin tin generously with cooking oil to prevent sticking.
- Fill Muffin Cups: Divide the egg mixture evenly among the 12 muffin cups, filling each about ¾ full.
- Bake: Place the muffin pan on the upper oven rack and bake for 23–25 minutes. Egg bites are done when the center is set and a toothpick comes out clean.
- Cool and Serve: Let the egg bites cool for 2–3 minutes, then carefully remove from the muffin tin. Serve warm and enjoy!
Notes
- For fluffier egg bites, you can separate the egg whites, beat them until stiff, and fold into the mixture.
- If adding extra ingredients like vegetables or meats, ensure they are fully cooked before mixing into the egg mixture.
- Use small-curd cottage cheese for a smoother, creamier texture. Large curd may make the bites slightly chunky.
