Description

This creamy, cheesy, low-carb Chicken Broccoli Bake makes healthy eating feel indulgent. It’s packed with flavor, super easy to prepare, and ideal for weeknights. Using rotisserie chicken makes it even faster — dinner ready in 35 minutes!


Ingredients

4 cups broccoli florets

½ cup cream cheese, softened

2 tbsp mayonnaise

½ cup shredded cheddar cheese (plus more for topping)

½ tsp garlic powder

¼ tsp sea salt

¼ tsp black pepper

1 ½ cups cooked chicken, chopped or shredded

¼ cup extra grated cheese (for topping)


Instructions

  1. Preheat oven:
    Set your oven to 375°F (190°C) and lightly grease a 9×9-inch casserole dish (use avocado oil spray or butter).

  2. Steam the broccoli:
    In a pot with about 2 inches of boiling water, steam the broccoli florets for 2–3 minutes until fork-tender. Drain well and set aside.

  3. Make the sauce:
    In a large mixing bowl, blend together softened cream cheese and mayonnaise until smooth. Stir in garlic powder, salt, and pepper.

  4. Add the chicken and cheese:
    Mix in shredded chicken and ½ cup of grated cheese until evenly combined.

  5. Combine and bake:
    Fold in the steamed broccoli and mix well. Transfer the mixture to your prepared baking dish, then top with the remaining ¼ cup of cheese.

  6. Bake and broil:
    Bake for 15 minutes, then switch to broil for 2–3 minutes until the cheese is bubbly and golden brown.

  7. Serve:
    Let cool slightly before serving. Enjoy warm with your favorite sides or a fresh salad.

Notes

  • Feel free to use any cheese you love — gouda, provolone, or a mix of marble and cheddar works great.
  • To save time, use shredded rotisserie chicken.
