Ingredients

1 cup 4% cottage cheese

3 large eggs, room temperature

2/3 cup old-fashioned oats

1/4 cup 2% milk

1/4 cup pure maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 cup fresh blueberries, divided

Maple syrup, optional for serving


Instructions

  1. Preheat oven to 350°F. Grease an 8×8-inch baking dish with cooking spray.
  2. In a large bowl, whisk together cottage cheese, eggs, oats, milk, maple syrup, vanilla, cinnamon, and salt until smooth.
  3. Fold in 1/2 cup of the blueberries. Transfer the batter to the prepared baking dish.
  4. Top with the remaining 1/2 cup of blueberries.
  5. Bake for 35–45 minutes, or until edges are lightly golden and top feels firm.
  6. Let cool for at least 10 minutes before slicing. Serve warm or cold, with maple syrup if desired.
