These warm and fluffy banana donut bites come together with only two main ingredients and cook in minutes. A quick, lighter alternative to classic donuts, perfect when you’re craving banana bread but want something fast.
Ingredients
For the Dough
½ cup mashed ripe banana (from 1 large banana)
¾ cup self-rising flour
Donut-Style Coating
½ teaspoon cinnamon
¼ cup sugar (use unrefined sugar, coconut sugar, or a sugar-free monk fruit blend)
2 tablespoons melted coconut oil (or melted vegan butter)
For Handling the Dough
2–3 teaspoons melted coconut oil for greasing hands

Prepare the Banana Base
Mash the banana until completely smooth. Measure out ½ cup—this amount ensures the proper balance between moisture and flour. -
Form the Dough
Add the self-rising flour to the banana mash and stir with a spatula until a soft, sticky dough begins to form. Lightly oil your hands and knead gently until the dough becomes elastic. Avoid adding extra flour unless absolutely necessary; if the dough is extremely wet, add only 1–3 tablespoons of flour maximum. -
Shape into Donut Bites
With oiled hands, scoop about 1 tablespoon of dough and roll into a ball. Place each ball on a parchment-lined plate. Repeat until all dough is shaped. Lightly spray the tops with oil. -
Air Fry
Coat the air fryer basket with a thin layer of oil spray. Arrange the dough balls inside, leaving at least 1 inch (3 cm) of space between them.
Air fry at 350°F (180°C) for 6–7 minutes, or until puffed and lightly golden. Shapes may vary—that’s normal. -
Add the Donut Coating
While warm, brush each donut bite with melted coconut oil. Roll immediately in the cinnamon-sugar mixture to coat evenly. -
