Ingredients
For the Dough
½ cup mashed ripe banana (from 1 large banana)
¾ cup self-rising flour
For the Donut-Style Coating (Optional but Recommended)
2 tablespoons melted coconut oil (or melted vegan butter)
¼ cup sugar (refined, unrefined, coconut sugar, or sugar-free blend)
½ teaspoon ground cinnamon
For Handling the Dough
2–3 teaspoons melted coconut oil (for greasing hands)
Instructions
Peel and mash a ripe banana until smooth. Measure ½ cup of mashed banana for the dough. The banana provides natural sweetness and moisture, so slightly overripe bananas work best.
Add the self-rising flour to the mashed banana. Mix gently with a spatula until a soft, sticky dough forms. Lightly grease your hands with melted coconut oil and knead the dough gently. Avoid adding extra flour unless the dough is extremely wet—1–3 tablespoons maximum.
Scoop about 1 tablespoon of dough at a time and roll into balls using oiled hands. Place on a parchment-lined plate. Repeat until all dough is shaped. Lightly spray or brush the tops with a small amount of oil.
Preheat the air fryer to 350°F (180°C). Grease the basket lightly with oil spray. Arrange the dough balls with at least 1 inch (3 cm) of space between them. Air fry for 6–7 minutes, or until puffed and lightly golden. Shapes may vary slightly—this is normal.
While still warm, brush each bite with melted coconut oil. Roll immediately in the cinnamon-sugar mixture to coat evenly.
Enjoy warm for the best texture and flavor. They are perfect on their own or with additional toppings like chocolate drizzle or yogurt.
Notes
- Substitute for Self-Rising Flour: If unavailable, combine ¾ cup all-purpose flour with 1 teaspoon baking powder and a pinch of salt.
- Storage: Store in an airtight container at room temperature for up to 2 days.
- Reheating: Refresh them in the air fryer for 1–2 minutes to restore warmth and texture.
- Sweetener Variations: Use coconut sugar, maple sugar, or monk fruit sweetener for a lower-sugar option.
- Coating Ideas: Swap cinnamon-sugar with cocoa powder, powdered sugar, or a small drizzle of melted chocolate.
