Ingredients
1 heaping cup rolled oats
1/2 cup smooth peanut butter
1/3 cup maple syrup or honey
1/4 cup mini dark chocolate chips
Optional Add-Ins
2–3 tablespoons nut milk (if needed)
1 tablespoon chia seeds or ground flax seeds
Instructions
-
In a large bowl, add the rolled oats and optional seeds if using.
-
Add the peanut butter and maple syrup (or honey). Mix until everything is evenly combined.
-
If the mixture feels too dry or crumbly, add nut milk one tablespoon at a time until it sticks together when pressed.
-
Fold in the chocolate chips.
-
Cover the bowl and refrigerate for 20 minutes to make the mixture easier to handle.
-
Line a plate or tray with parchment paper. Scoop about one tablespoon of mixture and roll into balls using your hands.
-
Chill again for at least 20 minutes until firm.
-
Transfer to an airtight container and store as desired.
Notes
- For best results, use smooth, well-stirred peanut butter. If it’s too thick, gently warm it with the syrup for a few seconds to loosen it.
- Seeds like chia and flax absorb moisture, so you may need a little extra liquid if you add them.
- Mini chocolate chips distribute more evenly than regular-sized ones.
- These can also be pressed into a pan and sliced into squares instead of rolled.
