Ingredients

1 heaping cup rolled oats

1/2 cup smooth peanut butter

1/3 cup maple syrup or honey

1/4 cup mini dark chocolate chips

Optional Add-Ins

23 tablespoons nut milk (if needed)

1 tablespoon chia seeds or ground flax seeds


Instructions

  1. In a large bowl, add the rolled oats and optional seeds if using.

  2. Add the peanut butter and maple syrup (or honey). Mix until everything is evenly combined.

  3. If the mixture feels too dry or crumbly, add nut milk one tablespoon at a time until it sticks together when pressed.

  4. Fold in the chocolate chips.

  5. Cover the bowl and refrigerate for 20 minutes to make the mixture easier to handle.

  6. Line a plate or tray with parchment paper. Scoop about one tablespoon of mixture and roll into balls using your hands.

  7. Chill again for at least 20 minutes until firm.

  8. Transfer to an airtight container and store as desired.

Notes

  • For best results, use smooth, well-stirred peanut butter. If it’s too thick, gently warm it with the syrup for a few seconds to loosen it.
  • Seeds like chia and flax absorb moisture, so you may need a little extra liquid if you add them.
  • Mini chocolate chips distribute more evenly than regular-sized ones.
  • These can also be pressed into a pan and sliced into squares instead of rolled.
